I finally decided to try this recipe that I tore out of my Cooking Light magazine, in 2005. It has been hiding in my huge pile of recipes to try for nearly 4 years!!
I was cooking for myself, so I just made rice as a side. It was tasty and really easy. When I make it again, and I will, I will double the honey mixture, there was just enough but it felt a little skimpy. I didn’t take any pictures, so I borrowed the one from the recipe page online. Starr stopped by just as I was finishing up, she had already eaten dinner, but she was tempted to try a taste anyway. She gives it a thumbs up.
I just had some of the leftovers warmed and in a sandwich. Yum!
Honey-Hoisin Pork Tenderloin
2 tablespoons sliced green onions
2 tablespoons hoisin sauce
2 tablespoons low-sodium soy sauce
2 tablespoons sage honey (I just used my regular honey)
1 tablespoon hot water
2 garlic cloves, minced
1 (1-pound) pork tenderloin, trimmed
1/4 teaspoon salt
Cooking spray
1/2 teaspoon sesame seeds
Preparation
Preheat oven to 400°.
Combine first 6 ingredients in a small bowl. Pour 1/4 cup honey mixture into a large zip-top plastic bag; reserve remaining honey mixture. Add pork to bag; seal and marinate in refrigerator 30 minutes, turning bag occasionally.
Remove pork from bag; discard marinade. Sprinkle pork with salt. Heat a large ovenproof skillet over medium-high heat. Coat pan with cooking spray. Add pork; cook 2 minutes, browning on all sides. Brush 1 tablespoon reserved honey mixture over pork; sprinkle with sesame seeds. Place skillet in oven. Bake at 400° for 20 minutes or until a thermometer registers 160° (slightly pink) or until desired degree of doneness.
Place pork on a platter; let stand 5 minutes. Cut pork across the grain into thin slices. Drizzle with the remaining honey mixture.
This song is less than 24 hours new to me, but it made me smile and then kept calling my name, so I felt the urge to pass it along!
It reminds me of a lot of things, things I can’t put my finger on. I hear faint memories of XTC (especially at/after the 2:25 mark), I hear some 60′s influences…and something else so flippin’ familiar! No matter, it just makes me smile and that is so important lately! I haven’t taken the time to listen to the lyrics closely, it is mostly the feel of the song that draws me back…again and again!

Starr loves her traditions! They have always been very important to her. One of them is eating/making pancakes on snow days.
It’s a snow day today. We have had 4 to 5 inches of snow so far and they are predicting 8 to16 more before this storm ends. I sit inside and watch. Thankful that I don’t have any outside errands to do.
Starr is at her apartment today, or possibly at the sorority house which is really close, walking in the snow would be worth it for the company! I am home alone.
So, do I make pancakes with out her? Mmm, I just might!

I realized why I haven’t been to the bookstore in so very long. I stopped by yesterday to pick up that 29 Gifts book that I mentioned in my last post. I’d forgotten just how much I love it there, all the books seem to be calling my name. I want them all. I want to spend my time browsing, finding new things, being reminded of the classics, soaking up the energy. I love it.
I don’t get that same feeling at the library. You have to know what you want at the library. Find it, check out, leave. I am not drawn in, I am not called.
I know now that have been resisting the bookstore because I’ve been watching my pennies. The bookstore is just to tempting!!
I have been feeling really low lately. I fall asleep in tears, I wake up sad. Emotionally drained and physically ill. My headache has been off the charts, every day. I don’t think that I ever truly recovered from my illness, things just aren’t right, fatigue has won out on a daily basis. I haven’t been keeping up, with the bookkeeping, with the house, with myself.
In an effort to gain control again, I made a list last night. A to-do list, the kind of list that used to keep me on track. I made a grocery list and made a menu for the week. I felt a little better. There were still tears to fall asleep with and heavy sadness to wake up to. I started the day differently, I showered first instead of checking my email, Google Reader and Facebook. Before I left the bedroom, I gathered a load of laundry and started it. Heck, laundry wasn’t even on my list but the FlyLady still influences me once in a while.
In control for a whole 20 minutes. Hello Monday. How long will it last?

After tons of searching the other day, I decided to try a theme from Elegant Themes. So far, so good! Most importantly, when I presented the comments link problem, it was addressed. Codes were changed and an update was made available in less than 24 hours. Pretty sweet.
In addition, I also asked a question about an issue that was frustrating me. Turns out it wasn’t a theme issue at all, but it was answered without being rude. It’s these kind of things that make me happy! Thumbs up!!
I found this picture of Starr a few weeks ago and it made me laugh. I think she was showing her appreciation for their waiter. I hear he’s a cutie!
Until I find a work around (and I am working on it!) or change themes again it appears that the comment link is missing on my posts when viewing from the home page. This doesn’t mean you can’t comment, I love comments!!

I decided to change themes the other day and I found one I really liked. However, while using it, I found some fundamental issues that make keeping it problematic. Frustrated, I emailed the author of the theme and was greeted with a rude response. Sweet!
So I have been searching for a substitute all day and haven’t found anything that makes me happy. Yet!
Until I find the right match, things may be a little funky around here. Please be patient with me!
